Vanilla, Lemon Peel, Bakers Chocolate
Nestled in a valley in Olancho Department, the village of El Carrizal is quite typical of rural communities in this part of central Honduras. The gravel road quite literally ends here – with a small elementary school next to the brightly painted Christian Reformed Church. Children play in the dusty streets. Cattle graze in nearby fields and farmers journey high into the surrounding mountains to tend their high quality Arabica coffee.
For coffee growers such as Claudio Salinas, the Rio Olancho direct trade coffee project has been a very exciting initiative. Claudio and the other coffee growers have regularly taken part in training provided by Diaconia Nacional and the Honduran Coffee Institute (IHCAFE). As a result, the Rio Olancho coffee project has grown from its origins of a small group in El Carrizal to now include nearly 50 coffee producers in nine communities.
The producers have been taught to protect the environment where their crop is grown. This means that the green coffee beans which are shipped to Canada are shade grown with organic fertilizer and natural insect control methods, and the natural habit is protected for tropical and migratory birds and other wildlife. By adhering to these principles of fair wages and sound environmental practices, the coffee has earned the Diaconia Nacional de Honduras distinction of being 'Certified Ethical.'
Now, in partnership with the Carpenteros and Friends, the Rio Olancho coffee producers are proud to export their highest quality ‘direct trade’ coffee beans for the enjoyment of Canadian coffee drinkers.

Not too acid, smooth, very pleasant with it's sweet finish.
Only problem; when I'm in a rush to go work or somewhere else, this coffee just makes me want to sit down and really enjoy the taste, which is not always possible.
It first got my attention by being direct trade, but now I'm going back to it for it's wonderful taste! (Posted on 9/27/2016)

The coffee is incredibly smooth, with a sweet after taste that makes you want to take another sip right away. Its also always fresh and never bitter. It is the thing I look forward to the most when getting up in the morning.
